The 1,500-square-foot tenant space in a new mixed-use building in San Luis Obispo was transformed into a vibrant restaurant, now home to the new Quesadilla Gorilla. The interior dining area blends an industrial aesthetic with exposed ceilings, polished and sealed concrete floors, and thoughtful design touches, creating a dynamic, modern environment. The kitchen includes a Type II commercial grease hood, a 12’x8’ walk-in cold box, and large commercial kitchen dishwashers. The restaurant now serves as a go-to spot for college students and Summit SLO tenants, offering great food, live sports, and WiFi in a welcoming atmosphere—enhancing the area’s vibrant dining scene.
